Favorite Diabetic Recipe - No Added Sugar Christmas Pudding

I have the following recipe for No Added Sugar Christmas Pudding which my family has used for many years now. My family comprises diet and tablet controlled diabetics and insulin injecting members.
I have given this recipe out to other diabetics and it has proved to be very popular. Many non-diabetics prefer it to the sticky, stodgy traditional recipe with lots of treacle etc.

Ingredients
9oz/250g dried dates, chopped
7fl oz/200ml unsweetened orange juice
6oz/175g raisins
3oz/75g currants
6oz/175g sultanas
5oz/150g wholemeal breadcrumbs
5oz/150g plain wholemeal flour
3tsp/3x5ml sp mixed spice
1 large carrot, peeled and finely grated
1 medium apple, cored and grated
3 size 3 eggs, beaten
Approx 4fl oz/100ml skimmed milk
Method
Place the dates and orange juice in a saucepan and bring to the boil.
Remove from the heat and allow to cool.
Turn into a bowl and add the remaining ingredients.
Mix well, cover and leave in the fridge overnight.
Place in three lightly greased 1pt/550ml pudding basins.
Cover with pleated greaseproof paper and foil and tie securely.
Steam each pudding for 3.5-4 hours, checking the water level regularly.
Allow to cool.
When cold, wrap with fresh greaseproof paper and foil.
Store in the fridge for up to 4 weeks.
